The preparation method is very simple and provides you with a steady amount of cheese.
You can give your cheese any particular flavor you like. Before you start, you’ll need to obtain some pasteurized milk. Then, mix it with an acid medium such as lemon juice or curd. Lemons contain citric acid, which has alkalizing effects and balances the pH balance in the body. The acidic environment will transform the milk to lactic acid which is good for your health.
- 1 liter of pasteurized milk
- 45 ml. of fresh lemon juice
- A pinch of salt
- Pepper, oregano, salt (you can use other seasoning if you like)
- 100 cc. of plain yogurt
- 2 tablespoons of cream
In a stainless-steel pot, add the milk and bring it to boil. After that, remove it from heat and cover the pot. Leave the milk to cool down for 20 minutes. Next, add the lemon juice, cream, and yogurt. Leave the mixture for 10 minutes. Reduce the heat to medium temperature and cook until you notice lumps of cream separate from the liquid whey. Now, add the spices and mix the ingredients well. Next thing you should do is taking out the excess serum by using a tablespoon. Strain the mixture by using a colander and gauze.
When you are done with straining the mixture, you should make good paste that can be shaped with your hands. Once you make the shape you want, put your cheese in a plastic container. Store it in the refrigerator and leave it for one day.
