In the middle ages Kale was one of the most common green vegetables in all Europe. It has a big colors range from light green to dark green, from violet green to brown. Kale is a great source of Vitamin C, Vitamin K, carotenoids, lutein and it has potent anti cancer properties.
Ingredients for the salad:
– 1 cup quinoa soaked overnight and rinsed
– 2 cups of water
– 4-5 red oranges
– 1/2 head of cabbage or kale crimp
– 1 cup of chickpea, soaked overnight, then washed
– 1/2 cup of chopped walnuts
– Salt, to taste
Ingredients for the topping:
♣ 6 tablespoons of hemp oil, or extra virgin olive oil
♣ 4 1/2 tablespoons of cider vinegar
♣ 2 tablespoons of fresh juice of red oranges
♣ 2 to 3 tablespoons of honey or agave
♣ 1 teaspoon of red orange peel
♣ Salt, to taste
In a small bowl whisk oil, vinegar, orange juice, 2 tablespoons of honey, cinnamon, and a pinch of salt. Taste and add more salt and / or honey, if desired.
♦Cut the kale without the stem into thin strips and measure three cups thinly sliced cabbage.
♦Peel three to four red oranges and cut into small pieces.
♦Combine kale, chickpeas, and orange in a large bowl with half of dressing.
♦Put the ingredients together and let stand for 10 minutes.
♦Put quinoa in a bowl and mix gently.
♦Add salt, and mix, then taste again and make changes if necessary.
♦At the top of each bowl sprinkle walnuts and red oranges.
♦Serve or store covered in the refrigerator without walnuts on top.
